Five foodie questions: Heathcote & Co and Staff of Life Bakery



Every day this week, we’re having a quick chat with one of the five excellent food traders who are on Festival Square from Friday 30 June to Sunday 16 July. After Honest Crust and Manjit’s Kitchen, we’ve two for the price of one today with Festival Square’s first foodie collaboration between Heathcote & Co and the Staff of Life Bakery


First things first: who are you?

We’re a collaboration. There’s Heathcote & Co, run by Paul Heathcote, who’s been cooking in the North West for more than 25 years – he got started cooking black pudding in a village called Longridge at a restaurant that earned two Michelin stars. And there’s Simon Thomas of the Staff of Life Bakery, which started in Kendal 20 years ago and will be baking fresh bread on Festival Square every day.


In five words, what are you serving on Festival Square?

Artisan bread and local produce.


What’s the most popular item on your menu?

For Staff of Life? Er, bread… OK, it’s ham with curd cheese.


Of the other traders on Festival Square, whose food are you most excited to try?

Hispi – as long as he doesn’t swear at me…


When you’re not at MIF, where can people find you?

Paul can be found at the newly opened Tomahawk Grill at the Bolton Whites Hotel, while Simon is at the Staff of Life Bakery in Kendal.
